Unlike most cookbooks, SIMPLY IRRESISTIBLE is spiced with dozens of invaluable cooking and baking hints, such as:

  • When measuring flour, never use a liquid (pyrex cup or one with a spout) measuring cup. You cannot get an accurate measure. Use the individual cups but do not dip them into the flour. Using another cup or a spoon, place the loose flour into the right sized measuring cup heaping it in, and level the top with a knife. Sugar should be done the same way. Liquids should always be measured in a liquid measuring cup (one with a spout) and never in the individual cups as it will not be accurate.
  • Any vegetable that grows underground (potatoes, beets, carrots) should be started cooking in cold water. Any vegetable that grows aboveground (peas, beans, corn) should be started in boiling water.
  • Fresh tomatoes keep longer if stored with the stems down.
  • Tomatoes cut vertically "bleed" less.
  • Herbs and spices that come in jars or cans must be crushed in your hands to release their flavor--it takes heat and pressure to release the oil that contains the flavor.
  • Herbs and spices will keep their flavor longer it they are stored away from heat (like the stove).
  • To keep bananas fresh for longer periods, wrap each one in its peel in aluminum foil and store in the vegetable bin of your refrigerator. Bananas stored in this manner will keep for up to three weeks.
